Anyone who has been following me on Instagram for a while knows that my absolute favorite color is pink! The girly, bright, fresh kind of pink that makes me happy to look at.
Well, I’ve been having such a bad time recently. There’s been so many problems with opening a bank account in Germany, which is a requirement when asking for a student visa to go study there. I’ve been feeling down, angry, crying a lot at night, and just so so frustrated. That’s why I haven’t been cooking, posting, or blogging very much. These things used to calm me down and make me feel better, but it’s been so hard for me the last few days. I don’t have any new ideas, and I don’t feel motivated to get creative like I normally do. It’s been really difficult for me. I am so scared that I won’t be able to go study what I’ve always wanted to 🙁
I’m not going to lie, I made this breakfast a long while ago, but haven’t been able to bring myself to write a blog post about it. Anyways, I dragged myself out of bed today. I know it’s wrong to let something I can’t control bring me down like this, so I thought I would try blogging again to get my mind off things. I told you pink made me happy, so here’s a blog post dedicated to a breakfast that resembles how I want the future to be: bright, simple and good.
Dragon fruit has to be one of the prettiest fruits out there. It has a leathery outside skin, a crunchy pink/white kiwi-like flesh with tiny black seeds. Dragon fruit doesn’t have a very unique taste, it’s only mildly sweet, but it’s packed with loads of fiber and is super low in calories.
If this tropical-fruit-inspired-breakfast isn’t enough to catch your attention, add some coconut to the mix. Some of you might say that chocolate and peanut butter is your favorite flavor combination, but that doesn’t make you feel like you’re on a tropical island. Have this dragon fruit coconut breakfast bowl in the morning and fly far away to Thailand (Hi there!), hehe.
If you haven’t made overnight oats before, then you’re missing out! Have I mentioned how healthy it is? I’m sure you know all about the health benefits of oats. They’re full of fiber, plant-based protein and lots of vitamins and minerals. So if you’re bored of having regular oatmeal for breakfast, try making overnight oats. They take much less time, and all the work is done for you overnight when you’re sleeping. I just love waking up and knowing that there’s something yummy waiting for me in the fridge.
This bowl of dragon fruit coconut overnight oats takes less than 5 minutes of your time to prepare, requires only a small list of ingredients and tastes so good. Enjoy!
- 1 cup rolled oats
- 1 cup coconut milk
- ⅓ cup mashed red dragon fruit
- 1 tablespoon maple syrup
- ½ teaspoon vanilla extract
- Mix all the ingredients together in a bowl.
- Stir well, cover, and refrigerate overnight.
- Remove from the fridge the next morning and top off with some fresh fruits and shredded coconut.
